My best sourdough pancakes
This simple recipe makes super tender and fluffy pancakes that use up discard starter. Perfect with butter and maple syrup.
I don’t have to sell you on pancakes. But these sourdough pancakes are next level. As a sourdough baker, I’m always looking for new and delicious ways to use up extra discard.
When it comes to pancakes, this is my default base recipe. And it never disappoints. This recipe:
Uses one-bowl. You mix together all the ingredients, let the batter rest, and cook it in a hot pan. Easy to make, easy to clean up. Somehow easier to enjoy.
Comes together the morning you want it. Some sourdough pancakes have you mix the batter the night before. But sometimes, pancake mood strikes morning of!
Uses all sourdough discard. This makes for the most tender pancakes. Other recipes use fresh (unfermented) flour in the final mix and skips on the benefits of using sourdough. Health benefits and taste benefits.
Has no added sugar. I like to leave the sugar out completely. It makes these pancakes versatile for sweet or savory use. If you want them sweet, drizzle on the tahini and maple syrup. For savory, I like them with mashed avocado, eggs, and a little chili crunch.
