It&#8217;s light and fluffy, perfect for sandwiches, burgers, and sopping up all kinds of sauces. With a high-hydration dough and longer proofing times, the structure of focaccia is open, soft, and spongy. If there ever was a bread that was secretly a cloud, this is it.</p><p>Think of focaccia like a blank canvas. There&#8217;s a lot of science to making focaccia but also a fair bit of creativity with the flavors. Toppings simply go on before dimpling and are pressed into the dough before baking&#8212;along with a good glug of olive oil. The classic is fresh rosemary and flaky sea salt but other perfectly acceptable toppings include olives, cherry tomatoes, and fresh thyme. It needs to be healthy, easy to make, moist, very banana-y, not too sweet, and with lots of dark chocolate surprises in each slice. It needs to be <em>good</em>: to my taste buds and to my body.</p><p>With a few tweaks, I&#8217;ve added more health benefits to this banana bread recipe. You&#8217;ll love it because it:</p><ul><li><p><strong>Has sourdough.</strong> There are so many <a href="https://www.nourishedandminimal.com/p/what-are-the-benefits-of-sourdough">benefits to sourdough</a>. Here, it adds moisture and flavor.</p></li><li><p><strong>Uses natural sweeteners.</strong> I prefer just a touch of maple syrup. A lot of sweetness already comes from the ripe bananas.</p></li><li><p><strong>Includes whole wheat flour.</strong> I use half all-purpose flour and half whole wheat. With this combination, you get lightness and nutrition&#8212;the best of both worlds.</p></li><li><p><strong>Has dark chocolate.</strong> My family loves banana bread with chocolate. I do too. Dark chocolate (at least 70%) is a good source of polyphenols, which is great for your gut.</p></li><li><p><strong>Comes together fast.</strong> This is a mix and bake recipe. Why do the ones from the store include so much sugar? Some of them are basically candy bars.</p><p>Once I discovered <a href="https://thegingeredwhisk.com/sourdough-granola-bars/#recipe">this recipe</a>, there was no going back. It&#8217;s a granola bar recipe that includes sourdough discard, a touch of sweetener, peanut butter, and basically whatever mix of nuts, seeds, and dried fruit&#8212;or chocolate chips!&#8212;you want.</p><p>They&#8217;re soft and full of nuts and fruit. The texture is more like a cookie bar than a chewy, sticky thing out of a wrapper. These granola bars easily replace store bought versions. For me, they check all the boxes. They&#8217;re:</p><ul><li><p><strong>Simple to make.</strong> With one bowl, you just mix and bake. They come together in about 30 minutes.</p></li><li><p><strong>Shelf-stable.</strong> They keep at room temperature for a couple days and even longer in the fridge. They&#8217;re great for school or office lunches, hikes, long bike rides, and traveling.</p></li><li><p><strong>Easy to customize.</strong> These ones are full of cashews, pumpkin seeds, mulberries, goji berries, and cacao nibs. Change up the amounts or types of nuts, seeds, fruit, and rolled grains all together to make your own custom blend. A few of my favorite combinations are:</p><ul><li><p>Chocolate chip + ginger + cherry (my kid&#8217;s favorite!)</p></li><li><p>Raisin + fig + walnut + fennel + rolled barley</p></li><li><p>Molasses + tahini + date + cardamom + buckwheat</p></li></ul></li><li><p><strong>Naturally sweetened.</strong> Just maple syrup and dried fruit gives these bars just the right amount of sweetness.</p></li><li><p><strong>A different way to use up discard.</strong> As you know, sourdough bakers are always looking for new ways to use up discard. recipe. And it never disappoints. This recipe:</p><ul><li><p><strong>Uses one-bowl.</strong> You mix together all the ingredients, let the batter rest, and cook it in a hot pan. Easy to make, easy to clean up. Somehow easier to enjoy.</p></li><li><p><strong>Comes together the morning you want it.</strong> Some sourdough pancakes have you mix the batter the night before. But sometimes, pancake mood strikes morning of!</p></li><li><p><strong>Uses all sourdough discard.</strong> This makes for the most tender pancakes. Other recipes use fresh (unfermented) flour in the final mix and skips on the benefits of using sourdough. Health benefits and taste benefits.</p></li><li><p><strong>Has no added sugar.</strong> I like to leave the sugar out completely. It makes these pancakes versatile for sweet or savory use. If you want them sweet, drizzle on the tahini and maple syrup.
